How do I set up a document so that if I edit the header on the first page of
the document, the rest of the headers update automatically?

By default, the Headers (and Footers) of a document will be identical
throughout if under Page Layout, you have NOT checked the Different First
Page and Different Odd and Even options. If you have checked either of those
options, then you will need to Copy/Paste the H&F contents from the Odd Page
Header into the First Page and Even Page H&Fs.

Would it be possible for me to reset the default somehow?

I've never tried but very possibly. Try renaming normal.dot to normal.bad;
restart Word and test them again.

Just clear the "Different first page" option in Page Setup to get rid of the
first page header (and footer).
