Word works vertically, not horizontally. You'll need to split your chart
into page-sized chunks.

I am trying to do a book chart, outlining sections, chapters, and
paragraphs.
I have set up the chart horizontally, and want it to move to the next
page,
etc, but it just keeps my words on one page instead of moving on to the
next.
