Default how do i apply .dot template to existing document in word?

Tools Templates and Add-Ins...
After you attach the template and are back in your document, go back in and
uncheck the box to update styles. (This is not a good option to leave
checked, and it is set for each document separately.)

I understand that the next version of Word will have something like a
.css
stylesheet.

A template handles the formatting of a new document based on the
template.
For an existing document, it can change the styles but not margins or
standard text. For more on the different kinds of templates, tabs on the
file new dialog, and locations of templates folders see
