Default Why does an equal sign in Equation Editor look like a T?

In the Equation Editor, go to the Style menu and click Define. In the
dialog, make sure all the dropdowns are set to Times New Roman (or a
similar "ordinary" font) except that the L.C. Greek, U.C. Greek, and
Symbol items are set to Symbol font.
