This capability depends on the version of Word you are using.

However, Word begins to encounter difficulties when more than one instance
of WinWord.exe is running and theyve gone to great lengths to prevent
multiple instances from starting. Perhaps if we knew more about why you want
to utilize more than one instance we could provide additional information to
you.

btw, Suggestion type posts are more for suggesting application
enhancements/wishes. Questions should be posted using the "Question" post
type so a reply in the thread be marked as an Answered Question. :-)
