Default Field only on first page

Are you referring to a field inside a header or footer? If so, you
need to enable the "Different first page" in File | Page Setup, Layout
tab. Then you can insert a field (or type text) into the first page
header (or footer). If it has already been inserted, you can cut it
from the main header (footer) and paste it into the first page header
(footer). Note that in a single-page document or template you can
insert one or more page breaks in order to see more headers and
footers (if necessary). When you've completed editing headers and
footers, just delete the page break(s).

On the other hand, if you want to make sure that text doesn't flow to
a second page, put it inside a border-less table cell whose height is
set to an exact amount. On the Table menu, click Table Properties.
Click the Row tab. Check "Specify height," type the desired value. At
"Row height is," choose "Exactly."
