Default getting rid of paragraph signs in Word 2007

Ctrl+Shift+8 toggles the nonprinting formatting characters on/off.

Office button - Word Options - Proofing - AutoCorrect Options -
AutoCorrect tab. You might also want to look at AutoFormat As You Type.
Setting UK spelling as your default would be done using Office 2007's
Language Settings.

I've hit a button by mistake and my document is full of formating
signs. Can someone tell me how to turn this off? Also, how can I turn
off auto-correct and get UK rather than US spelling?

I really think this new version is a retrograde step.
