I am trying to create a form in microsoft word that has a drop down date
field that shows a calendar to choose the date from.

You'll find an example for the calendar control, with a bit of explanation,
on the MSDN website. Search my name and you should turn up an article about
using ActiveX controls in Word documents. Keep in mind, if you're planning
on distributing this, that only machines where that control was installed
(it's part of Access) will have it; and only those installations are
actually licensed to use it.

The availability and licensing question will apply to ANY control you find
and decide to use. There are none provided with Word.
