If you're using a booklet setting in your printer Properties, then you'll
need to select it there, but if you want to print a booklet directly from
Word, choose "Book fold" under "Multiple pages" on the Margins tab of Page
Setup.

In Word 2003 the resulting print has the 2 pages of recipes on the
backside
upside down. In Open Office the same layout and printer produces a correct
duplex result.
After extensive searching on the booklet sites, printing booklets etc. I
wondered why 'booklet' wasn't available as one of the choices in the drop
down menu in Word 2003.
I'm to the point of giving up attempting to print from Word 2003 but I
wondered if there was a work around.
