When you use Insert Reference Caption, Word automatically applies the
Caption style. We could probably give you a better answer to your questions
if you could tell us why you don't want to use the built-in Caption style.

caption in the first place. What would happen if I made the table title a
character style. Could I create the caption and then overwrite it with
the
table title style? I think the caption formatting would be maintained,
no?
I was just trying to avoid the extra step but I guess I can't.
Also, is there a way to prevent the paragraph return from occurring with
the
insert caption? Sometimes I have to go back in a document and insert the
captions, then I have to maneuver out the paragraph return to reconnect
the
Caption to the Table title.

There's no way to tell Word to use some other style for this purpose.
It's
one of the very good reasons to use Word's built-in styles.
My recommendation would be to use the Caption style (modified to look the
way you want it). If you can't do that, then it may help to know that you
can search for text in one style and replace it with another style. Use
Edit
Replace. Leave the Find What and Replace With boxes empty, and use the
More Format Style list to identify the style to look for and the
style
to replace it with.
