Default my spell check stopped working for WORD 2007?

It's easy to miss the version information in a subject line (I do that all
the time), so you're forgiven. In Word 2003, with the template open, Ctrl+A
to Select All and go to Tools | Language | Set Language, make sure you have
the right language selected, and clear all the check boxes.

Note, however, that language is (for want of a better description) a font
property that can ride in on pasted text (as little as a single character),
so it's easy for documents to become "infected" with the wrong language or
text that's marked as "Do not check spelling or grammar."

Actually, no I'm not - I'm on Word 2003. I realized after I posted that
this
may be a thread for Word 2007. Sorry for the confusion. I still can't
figure
out how to enable spell check in templates though (without writing a
macro).

Can you please be more specific about where to find Proofing? I cannot
find
Office (round button on top left), Word Options, Proofing any where.

Assure that Check spelling as you type is checked.
