You can use Insert | File to move your problem document into the newly
created document, but make sure to delete any section breaks first;
otherwise you'll bring at least some of the problems with it.
If you have selected "Different first page" and have no section breaks, you
will see the First Page Header/Footer on the first page and the
Header/Footer on the subsequent pages. You can move between them using the
Show Next and Show Previous buttons on the Header and Footer toolbar. For

I was able to create a test document with a 0 the first sheet, 1 on the
second, so on. I wonder if I can copy all the text out of the six page
document into a new document and it will lose the footer/headers?

For the second, in this particular case a section break is unnecessary.
On the Layout tab of Page Setup, check the box for "Different first
page." This will create a First Page Header/Footer in addition to the
primary Header/Footer. Leave the First Page Header/Footer empty and use
the Insert Page Number button on the Header and Footer toolbar to insert
a page number in the Header/Footer. Then use the Format Page Number
button to open the dialog where you can set "Start at 0." This will
result in the second page being numbered 1.
