Make your changes then save as a personal style set. Make your style set the
default.
OR
Open normal.dotm in Word and make your changes directly.

I then thought I would change the Normal Style and set it "For all

based on this template." Will not work. When I open Word again, everything
is
back to Calibri 11pt, 1.15 line spacing and 10pt spacing after each
paragraph.
Would be most grateful of any advice to change these defaults.
