Format from Excel not being shown in mail merge
Add the following formatting switch inside the closing } of the mergefield.
Use Alt+F9 to toggle the display of the field codes.
\# "###'-'##'-'####"
For example
{ MERGEFIELD SSN \# "###'-'##'-'####" }
