One of the first things I did in Word 2002 was add a toolbar button to
access the Style dialog directly. And of course for just applying styles (as
opposed to modifying them), you can use Shift+click on the Styles dropdown.

Clicking in the left margin next to a TOC entry selects the line, and,
provided the entry is not longer than one line, that will do. And it should
be possible to select a paragraph with a double-click in the left margin.

I suspect that the problem with font formatting, at least in part, is

by the fact that it is so difficult to select a single paragraph in the
TOC
field (usually, I end up selecting the entire field instead).

'Automatically Update', make the ruler visible, then select the TOC
level
that you want to change and drag the tabs to where you want them.
