To do this you use Word's track changes feature. For more information, see

In your case, you need to use the "Changed lines" setting at Tools Options
Track Changes, and then on the Reviewing toolbar, use "Final".
Note, however, that while the tracked changes remain un-accepted in your
document, anyone will be able to see both the old and new versions of the
text by choosing to display the tracked changes.
