If you like white type on a blue background, the old WordPerfect
screen, you can set that option in Tools Options View.

Other than that, you can set the color of window backgrounds in
Control Panel Display Appearance (in Windows XP, click the
Advanced button in this dialog). That will affect all windows, not
just Word. Setting the Red, Green, Blue boxes to 255, 255, 225 gives a
nice cream color that's easy on the eyes.
