Default centering letter

There's usually "a way" to do anything - maybe even more than one. It's just
a matter of whether it's worth the time & trouble:-), but it may be as
simple as:

Word 2003: File Page Setup - Layout, Vertical Alignment - select Center or
maybe Justified

Word 2007: Page Layout Tab, click the dialog launcher button for the Page
Setup group & do as above.

If you want something more "sophisticated" you'll have to create continuous
section breaks which IMHO would overly complicate what should be a
relatively simple document.
