You often need to change the font to bold also: reversed type generally
appears lighter than the solid equivalent.

Select the text you want to format this way -- which I hope is only a
paragraph or two, since any more would be terribly hard on the eyes!

First go to Format Background & Shading, on the Shading tab, and
select red for the color. Make sure the Apply To box says Paragraph,
and click OK.

Now go to Format Font and set the color to white, and click OK.
