Default Changing the language preference for a document in Word 2007

I received a document, which I have to edit and add to. For some unknown
reason, the language preference for this document is English (United States).
I work in English (South Africa). My default language options under Word
Options, Language, has been set to English (South Africa). but this has no
effect. Obviously, this causes a lot of unnecessary stress, anger and
frustration, when I have to cancel auto corrections, wait for the word to be
shown as a spelling error, and then change the language - for that word only
- to English (South Africa).
And don't tell me to look on the review tab, because there is no option
there to change the language settings.
On the review tab the only language related options are Spelling & Grammar -
to do a spell check, but not to change the document's language settings;
Research, Thesaurus and Translate. Seems to me the only way to change this
document will be to select each word, right click, select Language, and
change it. When you block a word, a sentence, a paragraph or the document,
and you right click, this Language option is not there. To be quite honest,
I prefer Word 2002 and 2003! At least, it was user friendly, which cannot be
said of 2007
