Default how do you activate text direction?

You can change the text direction in text boxes (including those included in
drawing objects), frames, and table cells. You do this using Format | Text
Direction or with the Text Direction button that may appear on a floating
toolbar or contextual Ribbon tab when you select the object.

vertically or horizontally.

Click the drawing object or table cell that contains the text you want to
change.
On the Format menu, click Text Direction.
Click the orientation you want.
