Default automatic dates in template

I am using MS Word 2004 version 11.2 on a Mac.

My problem is when I (or my clients) open the document some time later
and then print it the date is updated and the date that is printed is
the date the letter was printed not created! This is not what I want.
I print out a 6 month old letter and it show the current date not when
I sent it.

How do I stop the date from automatically updating.
