Default change color of track change midway into an existing document?

Go to Tools Options User Information and change the user name, even by
one character. Set the Track Changes options to color the inserts and
deletions By Author. All edits before the name change will show in one
color, and all changes after the name change will show in another color.
Unfortunately, you can't specify the colors.

You can repeat this multiple times if needed.
