In Word, use Alt-F9 to display the field(s) you want to format, e.g.
{ MERGEFIELD myamount }
Delete \*Mergeformat if you see it, and type in the following numeric format
\#£,0.00
so you have
{ MERGEFIELD myamount \#£,0.00 }
Use Alt-F9 to toggle back again.
