Default date/time automatic update is off but date still updates.

The letters contain a DATE or TIME field. Press Alt+F9 to display the field
code, change DATE or TIME to CreateDate, Alt+F9 to toggle back, and F9 to
update. If you are using a letter template (as you should), I suggest
inserting a CREATEDATE field in the template.

Note that the "Update automatically" check box in the Insert | Date and Time
dialog affects only the dates you insert from that dialog. It has no bearing
on dates that have already been inserted. When you use Alt+Shift+D or the
Insert Date button on the Header and Footer toolbar to insert a date, it is
always inserted as a DATE field, using the format you have selected as the
default in the Date and Time dialog.
