Default Merge field delimiter in insert field formula ?

I don't think you can do it - you must insert the outer field, then the
inner one afterwards, for example, enter the first field as = A * 2 and this
will appear as { = A * 2 } then select the A and press Ctrl+F9 to get { =
{ A } * 2 }

As far as I can tell ctrl+F9 does not work in that situation, nor
typing directly the { } !
