Everytime I open a file it defaults back to red writing etc!

It's called Tracking mode... you probably pressed Ctrl+Shift+E. Press it
again to toggle tracking off.
If you're using Word 2007, look in the Review tab. If you're using Word
2003 or earlier, look at the Reviewing toolbar.

to cure - what does F2 do?
