Yeah, I keep forgetting this, too. OTOH, I'm still using Word 2003 for
production, so I haven't really gotten into customizing 2007 much.

Save As and choose Add to Quick Access Toolbar. And of course the Save
button can be removed by right-clicking it on the QAT and choosing
Remove
from Quick Access Toolbar.
