Default HIDE To AND Cc FIELD IN A MAIL

I usually create a custom TO address where the display text is something
appropriate, such as "Fairhope Rotary Board," and the email address is one
of my own.

Basically, you won't get to decide the configuration of the received
emails and visible headers in other people's email programs.

If you use, for example, Outlook Express and leave CC and TO fields blank,
then the TO field will show as 'undisclosed receipient'.
You can use a TO filler such as 'Odd person' that routes to an address,
perhaps yours, but the bcc entries don't transfer to the TO
entry. The CC line may not be displayed if it's blank when the message is
received.

You may also find that quite a number of spam filters will block messages
that have 'undisclosed recipient' or a blank 'TO' field in
them.
