You could split the document into sections, then use the buttons on the Page
Border tab (when you go to Format - Borders and Shading) to turn off the
appropriate parts of the border. Make sure you select 'Apply to.. This
section' from the dropdown field.

When you have a border selected over a specified piece of text, and
that text runs off the page, is there a way to stop MS Word closing
the border at the end of the page?

For example:

----------
blah
blah
blah
blah
---------- --end page
---------- --new page
blah
blah
blah
blah
----------

I want it to do something like this:

----------
blah
blah
blah
blah
--end page
--new page
blah
blah
blah
blah
----------
