Default "set language" in Word 2007?

The command mapping file is exactly correct:

XP's Tools Language (Set Language) is mapped to "Review Proofing
Set Language"

but perhaps you misunderstood the shorthand that's being used there.
"Review" means the Review tab. "Proofing" refers to the group of
buttons at the left end of the Review ribbon, which has the label
"Proofing" underneath it. The "Set Language" refers to the button in
that group (the second one in the third column).

I was (and am) clicking the Review tab--it's nestled in between
"Mailings" and "View" (on what I think is the Ribbon--I still don't have
the 2007 terminology down).

On that Review tab is the Proofing group--it's in the far-left area and
says "Proofing" underneath. In that area are two columns of buttons: In
the first column is a big icon-like button labeled "Spelling & Grammar"
and next to it, these buttons appear in the second column: "Research",
"Thesaurus", and "Translate".

You must be right in that I must be in the wrong area...? I've clicked
every tab in the ribbon and can't see anything else that has a
"Proofing" group. Where am I? :-)

It isn't _in_ any other dialog, it's a separate button by itself.

Like the similar command in previous versions, it applies its settings
to whatever text is selected at the time, so you still need to "select
all" first to apply to everything.
