Default Center Formating is Offset

I've set the margins in page setup to be 0.75 for left and right. When I
center the table, the margins of the table become 7/8 and 5/8. All my text
before and after the table is centered correctly, and has the correct margins.

right margins are uneven, or you've got a margin gutter, your print margins
will likely be uneven, so the table won't be cantered on the page - and
neither will anything else.
