How do I set Scots Gaelic as a language option in Word 2007

On the References tab of the Ribbon, choose Set Language (third column, third choice). Scroll down to "Gaelic (Scotland)." When you pick that option, any and all text that is selected will be marked as in that language. If proofing tools exist for the language, you can spellcheck, etc. |
