How do you type in the dash above the 'E' showing it is be sounded as a long

Showing the sound of a letter is either short or long
You'll need to insert the symbol for it.
2003 Insert Symbol... Then many fonts will have these symbols listed in their Latin Extended-A font subset. If there are several of these characters you plan to use on a regular basis, you could set up a custom shortcut command (perhaps ALT + E) while you're in the Symbol... menu. That shortcut will work for any font that has a supporting character. Showing the sound of a letter is either short or long
All vowels with macrons and breves are found in the Latin Extended-A
