Default DATE AND TIME

How do I enter the date and time on a word document without using the insert
option in the menu bar or the header and footers option? Is there a short cut?

That is the shortcut! Where you go from there depends on what you really
want inserted in the document. You may require a macro solution attached to
a toolbar button or keyboard shortcut..
eg

Sub InsertUSFormatDate()
With Selection
.InsertDateTime DateTimeFormat:="MMMM" & Chr(160) & _
"d," & Chr(160) & "yyyy", InsertAsField:=False
End With
End Sub

Default DATE AND TIME

Insert the CREATEDATE field in your document template. You can do this
either via Insert | Field or via the creation date AutoText entry.

Default DATE AND TIME

Alt+Shift+D inserts the date (and/or time) in the format you've selected as
the default in the Insert | Date and Time dialog. Note, however, that it
will be inserted as a DATE field, which will update whenever you open the
document. Users rarely want this. A CreateDate field in your template, as
others have suggested, is a better approach.
