Default TOC

I am working with a long document (200+ pages) and trying to insert a toc. I
have formatted the titles that I want to appear, but when the toc is created,
it is picking up a lot of "stuff" at the end of the document. Is there an
easy way to reformat that stuff so it will not get picked up by the toc?

Presumably the "stuff" that's being picked up has a heading style applied.
If you want headings that look the same but aren't picked up, create a new
style identical to the heading one but not based on it (and with an outline
level of Body Text).
