text turns red and is lined out, what short cut am I hitting without

It sounds as if you have turned on Track Changes. You can toggle Track
Changes on and off via the shortcut Ctrl+Shift+E so this may be the key combination you hit (can also be turned on and off by double-clicking "TRK" in the Status bar (bottom of window) in case of Word 2003 or earlier.
