How can I protect table cells in a word document?

You can't protect the cells on their own. You can put the table in its own
section, and protect the section to preclude all editing.

Insert section breaks before and after the table, then use Tools Protect
document.

You could use and Excel Sheet in the documnet instead of a Word Table. The
only time it appears different is when you are actually working in the Sheet
(Table)
