Default Why using formatting for part of document is done for all?

Hi,
I am using the Word 2003. When i want to use the formatting e.g. centring a
sentence or a picture, as part of a document, the Word goes into a hand mode
until it applies the same formatting to the entire document.

My second question is, i had a Word2000 and i recently moved to Word2003, my
old document which was 6M now in Word2003 is translated into some ridicules
size of 45M and as i add text and small image to it it has grown to be 185M.
I have had the tracking on this document.

I am puzzled by these two issues, any help will be appreciated.
