Is there a one-click way of placing the cursor in an open document without accidentally selecting text? (Word 2007)

Just click the mouse without moving it. Or am I missing something?

Default Placing cursor

As Peter wrote, just click. As long as you're clicking in the document (not
in the margin), this works the way it did in earlier versions of Word.
