Default Stop changing the date of a previously saved doc to today's date!

How do you stop Word from automatically changing the date of a saved memo or
letter to today's date, rather than keeping the date that was input
originally?

Sounds like the original document had an "insert date" field rather than a
"create date" field. If it is a template that you base new documents upon,
simply delete the insert date field and replace it with a create date field.
I hope this has been helpful to you.
