Default How do I insert a current date in a template and then keep this i.

sOur secretaries use templates for letter etc. Currently the date is input
automatically as the current day's date. The only problem with this is that
when you reprint the document at a later date the date on the print out again
reflects the current date on the computer not the date the letter was
orginally printed. Is there a way to get an auto date into new letter which
is then fixed not set as auto update?
