Default pasting text so if the original changes so will the pasted text

Can someone tell me how to paste text into a Word 2003 .doc file so that if
the original text changes, so the text that was pasted will change at the
same time.

Instead of just pasting, use Edit Paste Special and click the "Paste
link" option on the left side of the dialog.
