How do I continue to display "recent document' under the Office button?

This is still gobbledegook. Please explain what you mean.

I assume that since you mention the Office button, you are using Office
2007. That being the case, click on Word Options in the bottom border when you click on the Office button and then on Advanced and in the Display section of the dialog, set the number of documents that you want to be displayed in the box beside "Show this number of Recent Documents:" -- Hope this helps.
