Default how do you make a letter with optional content to merge

Is there a way to have a letter template where you can choose different
content to go in a letter that will be in a mail merge?

If the content differs depending upon the value contained in a particular
mergefield, then use and If...then...Else construction, possibly in
association with IncludeText fields.
