Default Use & in dropdown list

I'm using Word 2003. I have the text string "M & O" in a form dropdown list.
It shows in the list just fine, but when selected, and the list collapses,
the "&" disappears and the selection shows as "M O". I've tried using
single quotes around it, double quotes, \, and even &&. (When I expand the
list to make another selection, the M & O is still there.)

I want the & character to be visible as this completed form is printed to pdf.

I'd appreciate any suggestions.
