I want to be able to Tab thru a document without disrupting the entire
document. How can I make it so that the whole document is protected except
certain fields such as First Name, Last Name, Address, Etc, to where I can
tab to each and fill in those areas where they would be highlighted for my
eyes but when printing it out, it would look normal? Does this make sense?

What you are talking about is what Word calls an "online form." Check this
