The option "Properties" - "Statistics" of a word document shows
following items:
created (date and time)
modified (date and time)
accessed (date and time)
printed (date and time)

Is it possible to remove this info from a document?

The menu option "Remove personal information" doesn't remove
this.

No. You can Save As to restart the clock, but you can't modify these
properties.

You could make changes using the script editor - ALT+SHIFT+F11
