Is there any way to create a custom color palette in Word?

No, but you can create character styles that use custom colors, paragraph
styles with custom shading colors, and AutoText entries for tables, text
boxes, AutoShapes, etc., with custom fill or shading colors.

Do you know if these styles/Autotext, etc. is committed to just the one
document, or does it become integrated into your "Normal.dot" ? Thanks!

Styles can be saved in a document; AutoText must be stored in a template. If
you don't want to save styles and AutoText in Normal.dot, create a specific
document template and save them there.
