Default Where has the old "shrink to fit" gone from Office Word?

In Word 2007 I cannot find how to shrink a document that is just over one
page in size to fit into the one page for printing.

It's on the ribbon only in the Print Preview. But you can right-click it there
and add it to the Quick Access Toolbar for use in other views.
